Description

Lobel’s dry-ages USDA prime beef up to six weeks, sourcing only the top 2% of an already-elite grade before hand-cutting and vacuum-sealing every order for overnight delivery. Beyond beef, the shop carries Wagyu, Berkshire pork, all-natural veal and lamb, and a line of artisanal sausages — all cut the same way they’ve been cut since 1911.

The butcher counter at 1096 Madison Avenue has held its spot since 1954, still scattering sawdust on the floor the old-fashioned way. Six generations of the Lobel family have worked that block, and the sixth — Joey, Brian, and Michael — is behind the counter now, learning the same cuts their great-great-grandfather brought over from Austria.
